My mom and I have a game we play and I’m going to share it because I think it’s the best way to describe this last crazy week. It’s called fortunately/unfortunately and it’s played like this…
Fortunately, my mom came to visit me this week… unfortunately, the house was a disaster and the kids were nuts so nobody slept.
Fortunately we both really like tea…
Unfortunately, my son barfed all over the car on an outing… Fortunately, it was only once.
Unfortunately, my washing machine broke so we had to take laundry to my dad’s every second day… Fortunately, my mom was super generous and helped us get a new one.
Unfortunately, it still won’t be here for another 3 days making it 2 weeks without a washer…Fortunately the weather is so amazing I’m just letting the kids run around naked cutting back on laundry.
Fortunately , my stepsister came into town with my niece for a visit…unfortunately, I had to share her so I barely got to see them.
Fortunately, my husband came home a day early this week…unfortunately it’s week three of solo parenting and I was completely pooped so I probably wasn’t there
Fortunately, it was our son’s third birthday party on Sunday and we all had a blast…unfortunately, he was so wired that he was up until 11pm about 2 hours past when we were still functioning.
As you can see it was an awesome and totally crazy week that has left me beyond pooped and with almost no time to write out the recipes or anything for my meal plan. I’m going to do my best though so here is what we ate the last week
Monday
Breakfast – Mini Eggy Bagels
Toasted mini whole wheat bagels with melted cheese, scrambled egg and a slice of tomato
Lunch – Tuna salad wraps
Dinner – Sweet Potato, bacon and kale mac and cheese
This was a recipe I was really hoping to have perfected for this week but it’s still in need of a tweak. Back on the menu for next week to get it perfect.
Tuesday
Breakfast – Frozen home-made pancakes with fresh fruit, plain yogurt and a little syrup
Lunch – Mini ham bagel sandwiches with sliced apple
Dinner – Spring Asparagus Salad
This was totally inspired by the amazing spring we are having so far. Fresh yummy asparagus roasted, with crisp bacon, perfect eggs, romaine lettuce and a tarragon dressing.
Wednesday
Breakfast – Granola, plain yogurt and frozen blueberries
Lunch – Tuna Salad wraps
Dinner – BBQ chicken sandwiches with cilantro lime coleslaw
This is a great warm weather meal. A store-bought rotisserie chicken tossed in home-made BBQ sauce. Pile that onto a bun and top with a cilantro lime coleslaw. Impressive, quick and super tasty
Thursday
Breakfast – Toast with peanut butter and banana
Lunch – Turkey sandwiches
Dinner – Sweet potato, bacon and veggie hash
A great way to use lots of veggies in a delicious and easy dinner that you can adapt to your favourites
Friday
Breakfast – Oatmeal with frozen blueberries
Lunch – Ham sandwiches
Dinner – Tomato and Zucchini Pasta
In a large pan over medium heat cook 1/2 a diced onion in 1 tbsp olive oil. Once soft add 1 crushed clove of garlic and a whole zucchini thinly sliced. Saute until the zucchini has a bit of colour then add 4 diced medium-sized tomatoes. Add 1/2 a cup chicken stock and 2 tbs fresh chopped oregano, simmer until the tomatoes have become saucy. Finish with 2 tbsp cream cheese and toss with your favourite pasta. I wish I had taken a picture because this was super yummy
Saturday
Breakfast – Quinoa patty cakes
It’s not a pancake or a cake so we’re going with patty cakes. It’s a yummy combination of grated apple, cooked quinoa and cinnamon in a healthy and filling breakfast
Lunch – Leftovers
There’s always something to clean out of the fridge
Dinner – Steak Burritos
BBQ’d steak cut into thin strips with sautéed mushrooms, diced tomatoes, cilantro, shredded cabbage, cheese and a little hot sauce for the grown ups
Sunday
Breakfast – Breakie Burritos
Scrambled eggs in a warm tortilla with avocado, diced tomato, lettuce and yup a little hot sauce for the grown ups
Lunch – nibbly plates
We snacked on cut veggies cheese and crackers
Dinner – Birthday BBQ sliders, potato salad, cut veggies, and assorted snacky things
I made the grown ups bourbon, bacon caramelized onion sliders (mini burgers) and for the kids good ol’ cheese sliders. A friend brought an amazing potato salad with grainy mustard, tomatoes and snap peas and I had easily nibbled cut veggies. Delicious!
