Weekly Meal Plan – Autopilot

As I struggled to once again put my daughter to bed last week I noticed that my brain has become permanently impaired. I was staring at her pj’s and seriously considering changing them because the last time she wore them she was up all night. Was this an omen, was there something about these pj’s she didn’t like? Unfortunately, I have been blessed with a sh*t sleeping baby and it’s taking its toll.

It’s a little nutty how we sleep deprived folks start to think.  I once told my mom that I was changing the sheets on my daughters bed because maybe it was the smell of desperation that was keeping her awake. Tonight I changed her lullaby music to U2 from Bob Marley because I was worried ‘Babies sing Get Up, Stand Up’ might be too intense and that was keeping her up. I look for any clue and out of wild desperation probably start to sound a little OCD. (If I touch her right elbow before I put her down she sleeps longer then if I touch her left leg).

In fact I got so desperate for some sleep that I came up with the plan to drive 6 hours up-island to possibly see whales migrate. I figured that maybe my daughter would sleep on route and that would help her catch up (she wasn’t napping either). My dad was worried, rightfully so, and decided to tag along. We only made it three hours away before my son barfed and I realized this was a silly plan. We stopped for burgers, spent 10 minutes on the beach then packed back up and headed home. She did however sleep almost the whole trip and that seemed to carry over for a night.

Slowly this week it seems to be getting a little better although I’m terrified to utter those words.  Plus I have no idea what I’ve done differently so have little faith that it’ll stick. But one can hope and pray right.

So if you have any families you know in a similar situation this is the meal plan for them, or maybe bring them food. I bet they’d love it if you made the meals for this week:)

The burgers were great and they even had showers so I could clean out the majority of the barf from my carsick kid

Dinner – Frozen Pizza
I totally recomend  Buitoni’s pizzas. They are damn good for a frozen za

Breakfast – Yogurt, fruit and granola

Mediterranean Chicken Meatballs

Mediterranean Chicken Meatballs

My son calls this daddy yogurt because it’s usually the bedtime snack they share….awwwwww

My son struggles to not just eat the bacon. It’s I think his favourite food

Dinner – Asian salad with chicken
2 cups shredded cabbage, 2 julienned peppers (thinly sliced), 2 carrots thinly sliced, 2 cups chopped broccoli  2 cups bean sprouts, 1 cup roughly chopped cilantro. Toss the veggies together and dress with my Asian vinaigrette (2 tbsp canola, 1 tbsp sesame oil, 1 tbsp white vinegar, 1 tbsp hoisin sauce, 1 finely diced clove garlic and 1 tbsp finely chopped green onion) Top with grilled chicken and it’s a great warm weather dinner

Breakfast – Quinoa apple patty cakes
These are great with leftover quinoa but cooking it that morning only adds 15 minutes to pancake making recipe coming as soon as my baby girl sleeps long enough to type out

Lunch – Leftovers
I always have something hiding in there

Breakfast – Egg quesadillas

Cod Sandwich

Cod Sandwich

I scrambled a few eggs then placed a portion on one side of a large whole grain tortilla, topped it with shredded cheese some cooked bacon and then folded the tortilla. In a pan over medium low heat cook the quesadilla until just browned on both sides and the cheese is melty

Lunch – Leftovers
Again… yup I really needed an easy week:)

Dinner – Cod sandwiches with homemade tartar sauce\p
These were really quick to make and I swear I’ll have the recipe up right away (probably not but I’m going to try) It’s UP!!!!

Even with little to no sleep it was still a great week. We had lots of fun out and about while I tried to stay awake. If you’re looking for how I create my meal plans here is a great post HERE
